Ontario Old Hickory Boning Knife
The Old Hickory series was launched in 1924 and currently still features a classic look and solid workmanship. The Boning model is a kitchen knife with a blade that will be perfect for boning meat. The narrow and flexible blade makes it easy to carve fillets and tenderloins.
The clip-point profile head is made of 1075 carbon steel hardened to 53 - 58 HRC, which is characterized by easy sharpening and long sharpness retention. The knife is of full-tang construction, that is, with the blade's bolt passing through the entire handle. The sturdy handle consists of walnut wood facings, and the whole is reinforced with brass rivets.
