The filleting knife is an indispensable tool in the hands of more advanced cooks. It is particularly useful for the precise separation of meat from bone and skin. Filleting knives are specialised tools for minimising meat loss during separation. 

Fish filleting knives are usually blades with a slender design that is adapted to working with delicate fish meat. The blades of fish filleting knives are long and thin, making it easier to trim the meat near the bones.
